📕 Description: Horse Mackerel sushi, also known as Aji Sushi, has white to slightly pink flesh and becomes darker pink as it gets closer to the fish skin. Horse Mackerel is most often salted and soaked in sushi rice vinegar for a few hours before serving. This process puts a slight cure on the horse mackerel that removes fishiness, heightens flavor and tenderizes the fish. Horse mackerel is a good protein source that contains low levels of mercury, high levels of essential oils, plenty of Omega-3 and Omega-6 fatty acids.

😋 Taste: The taste of Aji sushi can vary depending on how the sushi chef has prepared it. Most often horse mackerel has a rich and slightly fatty flavor that will not disappoint. The texture of horse mackerel sushi has a meaty and slightly firm texture similar to very tender cooked squid.
